Spicy Schezwan Noodles Recipe

ngredients
For cooking the noodles:
  • 150 grams hakka noodles or plain noodles, 1 pack of noodles
  • 5 cups of water to cook noodles
  • 1 to 2 tsp oil to coat the noodles
  • 2 to 3 drops of oil to be added while heating water
Other Ingredients
  • 2 cups finely chopped vegetables (carrots, beans, cabbage, mushrooms, capsicum/green bell pepper)
  • 1 medium carrot, finely chopped
  • 2-3 small spring onions
  • 10 french beans, finely chopped
  • 1 small capsicum/green bell peppers, finely chopped
  • 8 mushrooms, finely chopped
  • 3-4 garlic, finely chopped
  • 1 tbsp schezwan sauce, you can add more for more spicy
  • ½ tsp black pepper
  • 1 tsp rice vinegar or regular white vinegar or apple cider vinegar
  • 1.5 tbsp of spring onion greens
  • 2 tbsp oil for stir frying
  • salt

Directions

Prepping the noodles:
  1. Boil 5 cups of water (1 cup = 250 ml) in a pot with some salt and a few drops of oil.
  2. Add the noodles in the hot boiling water.
  3. Cook the noodles according to the package instructions.
  4. When the noodles are about cooked,  then strain the noodles.
  5. Rinse the noodles in running water very well.
  6. Add oil to noodles and toss the noodles gently.
  7. Let the noodles cool completely before add them to the stir fried veggies.
Preparing the veg schezwan noodles:
  1. Heat oil in a wok, on a medium flame.
  2. Add the garlic and saute for a few seconds.
  3. Increase the flame and then add the finely chopped spring onions. Stir fry on a high heat for about 1 minute.
  4. Add the french beans. cook about 3 to 4 minutes.
  5. Add the remaining veggies, cook on the high flame.
  6. Stir fry for about 7 to 8 minutes till the veggies start to slightly brown.
  7. Now reduce the flame to medium heat and add schezwan sauce, salt and black pepper.
  8. Add the noodles and stir fry.
  9. Increase the flame and keep on tossing and stir frying the noodles till the schezwan sauce coats all the noodles well.
  10. Add rice vinegar or white vinegar and mix well.
  11. Add the chopped spring onions. Stir.
