Yummy!!! Couscous Salad

 

 

Serves: 4            Prep time: 


Ingredients

  • 200g of couscous
  • 270ml hot vegetable stock
  • 5 tomatoes, chopped
  • Sweetcorn, drained ( 340g can )
  • ¼ cucumber, chopped
  • 1 small red onion, finely chopped
  • 5 dried apricots, chopped
  • 2tbsp olive oil
  • Juice ½ lemon
  • 4tbsp chopped parsley
  • 3tbsp sunflower or pumpkin seeds

Directions

  1. First, put the couscous into a large bowl and add the stock. Cover it and leave to soak for 10 mins.
  2. Meanwhile, prepare all the vegetables and with the apricots, put them in another bowl.
  3. Add the olive oil and lemon juice, mix together well.
  4. Use a fork to fluff up the couscous then add the vegetable mixture.
  5. Add the chopped parsley and sunflower or pumpkin seeds. Toss together.
