Ingredients
- 200g of couscous
- 270ml hot vegetable stock
- 5 tomatoes, chopped
- Sweetcorn, drained ( 340g can )
- ¼ cucumber, chopped
- 1 small red onion, finely chopped
- 5 dried apricots, chopped
- 2tbsp olive oil
- Juice ½ lemon
- 4tbsp chopped parsley
- 3tbsp sunflower or pumpkin seeds
Directions
- First, put the couscous into a large bowl and add the stock. Cover it and leave to soak for 10 mins.
- Meanwhile, prepare all the vegetables and with the apricots, put them in another bowl.
- Add the olive oil and lemon juice, mix together well.
- Use a fork to fluff up the couscous then add the vegetable mixture.
- Add the chopped parsley and sunflower or pumpkin seeds. Toss together.
